For the love of Sandwiches

Although my kids love Indian food a lot, for school tiffin they only prefer non messy food...... meaning food that don't drip or get sticky .Having to leave the house as early as six thirty in the morning,they take only a cup of Milk before leaving home.I know they will be starving when their tiffin break rolls around .

To prevent them from eating each other up by the time they reach home for lunch, I usually pack sandwiches for them -all five days of the week. For variety , I just keep changing the fillers, keeping in mind to make it as healthy and wholesome as possible.

Curried Sandwich


4 slices Whole Wheat Bread

1 small potato finely chopped

1 small carrot finely chopped

1/4 onion finely chopped

a handful of frozen peas

A little chopped coriander leaves

1 tsp curry powder ( I use Gazelle Madras Curry pd or Rajah's Curry Pd)

1/4 tsp chilli pd

1/4 tsp turmeric powder

1 /2 tsp Lime juice

Pour a little oil in a kadai, add onion and saute.When it turns pink and translucent add the vegetables one after the other.

Saute for a few minutes till they turn a little limp.Add the dry powders and salt.Stir.Pour in 1/4 cup of water.

Cover and cook till the vegetables are done.Sprinkle coriander leaves and lime juice.

Butter Bread on the outer side. Place the masala inner side of the bread slice.

Keep in the sandwich maker and Viola!

Nice closed crispy sandwiches ready. !Not a day passes by with out me paying obeisance to my beloved Sandwich Maker :)

  • The potato can be substituted with cauliflower or broccoli too.
  • Tastes great eaten hot. Wait till it cools a little before packing or else it will get soggy.
