Chicken in Garlic Sauce

250 gms Chicken (Boneless )
1 capsicum ( cut into 1″ squares)
1 Carrot ( thin slices)
12 pods Garlic (Chopped finely)
1 cup Tomato Ketchup
1 cup Stock (Chicken)[if you are using stock cubes,1cup=5 maggi cubes]
1 tsp chilli powder
1 onion ( chopped into 1” squares)
1 tbsp Corn starch (Corn flour dissolved in cold water)
1 tbsp Corn flour
A little Spring Onion( chopped)

Mix Cornflour and chicken.Shallow fry and keep aside.Pour oil in a pressure pan, add chopped onions,and garlic.Add the carrots, tomato sauce,stock, salt, chili powder , fried chicken and water.Allow to boil.Cook till the chicken is 3/4 th done.Add the capsicum and cook till done.Now add the cornstarch.Bring to boil and remove from fire. Sprinkle spring onion .Serve with Cantonese Fried Rice.
